As part of my plum recipes series, I'll cook a no sugar plum cake today. It's also known as plum clafoutis. But unlike the original recipe, I'll use vegetable milk instead of cow milk and monk fruit sweetener instead of sugar.
To cook this no sugar plum cake, you'll need the following ingredients:
Fresh plums - 400 g
Veg milk - 250 ml
Flour - 120 g
Monk fruit sweetener - 120 g
Eggs - 4 pcs
A pinch of vanilla (optional)
You'll also need:
A baking tray
Baking paper
An oven
To start with, wash the plums and cut them into 2 parts each. Next, remove the seed, and you may either leave them as is or cut them into 2 more slices.
Once you're done, put some baking paper into the tray (I use an 18 cm round baking tray, but may take a larger one, up to 24 cm in diameter). Then, put your plum into the tray. And now it's time to prepare the dough.
To do that, mix your milk, flour, sweetener and eggs, and vanilla into a large bowl. You can either do it with a hand whisk or an electronic one. The dough should be of the consistency of sour cream.
The last step is simple – pour your dough onto the plums (make sure it covers all of them), and put it into the oven, heated to 180° C. Bake for about 40 min. The baking time depends on the stove you have and on the dough consistency. So I suggest you check your clafoutis every 10 min to see if it's ready.
When the clafoutis is ready, let it cool. You can then either swap it and put it onto the plate or remove the tray (mine has a removable bottom) and serve as it. Additionally, you can sprinkle some icing sugar on the top.
